Help! I Need a Pumpkin Cheesecake Recipe!


I've been charged with creating a dessert for Thanksgiving this year, and I'm not quite sure what to do. After Halloween I'm a little sick of all the chocolate for a while, I don't have pie pans and have never baked a pie, and cupcakes just seem too sweet after a big rich meal. I know I can make a cheesecake fairly easily, so I started poking around the web for a more unique yet still easy variety, but I'm just not finding what I want. Anyone have an easy pumpkin cheesecake recipe, where I can use Keebler ready-made crusts? I don't have spring form pans, so I can't do anything New York style that really rises. Ideas?

It's from a vegan website. Obviously if you aren't vegan you can use regular dairy cream cheese. Hope that helps!
